Our first anniversary meal!

For our first anniversary, we decided to try something new! Matt took on the task of making "Stuffed Flank Steak" - the recipe was found in the "Great American Favorite Brand Name Cookbook - Collector's Edition"... The picture looked delicious!



The recipe is as follows:
1 (1.5 lb) flank steak, pounded
2 cups herb-seasoned stuffing mix
2 teaspoons beef-flavor instant bouillion or 2 beef-flavored bouillion cubes
flour
3 TBSP veggie oil
1 cup chopped onion
1 clove garlic, chopped
2 (10 3/4 oz) cans condensed tomato soup
1/2 tsp basil leaves
hot cooked noodles
parsley
- preheat oven to 350
- prepare stuffing mix according to package directions, dissolving bouillion cubes in liquid
- spread stuffing evenly on top of steak to within 1 inch of edges
- roll up steak, tucking in ends, tying with string
- coat roll with flour
- in large skillet, brown in oil



- place in shallow baking dish
- in same skillet, cook onion and garlic until tender
- add soup and basil; cook and stir til smooth
- pour over meat
- cover and bake 1 hour - basting occasionally
- serve with noodles; garnish with parsley
- refrigerate leftovers!



NOTE:
- we used cornbread stuffing instead, just a personal preference
