Whoopie Pies!



For as long as I can remember, the recipes for Whoopie Pies has been an important part of my mom's culinary collection. I never much liked them considering my dislike for chocolate. Matt and Michael (Matt's oldest friend) got into a "debate" about the difference between moon pies and whoopie pies one day... So I decided to make the Whoopie Pies! Without any further ado, here the recipe is:

The "bread" part:

2 cups flour

1 1/2 TSP baking soda

1/4 TSP salt

1/2 C margarine

1 C milk

1/2 C sugar

1/2 C cocoa

1 egg

1/2 TSP vanilla

Preheat oven to 425.

Sift dry ingredients together. Cream margarine and sugar then add egg and vanilla. Add the milk alternately with the dry ingredients. Beat until smooth.

Drop by TBSP onto greased cookie sheets.

Bake for 7 minutes.

The filling:

1/2 C butter

1 C granulated sugar OR 2 C confectioner's sugar

1/2 C Crisco

6 TBSP flour

1/2 C warm milk

1 TSP vanilla

Cream shortening and butter together. Gradually add sugar and flour.

Add milk and vanilla- keep beating until it is airy and there is no sugar particles remaining.. (to do this you basically have to take a finger and feel it!)

Put pies together. YUMMY :)
